Vice President of Culinary

Executive Chef:
Position Overview:
This position is responsible for overseeing all food purchasing and production for the Garden of the Gods Resort and Club, Kissing Camels Club, Recreation Center and Seasonal Pools, Banquets and Barista.
Responsible for developing menus, food purchasing specifications and recipes.
This position is also responsible for the following:
Supervising all culinary team members, develop and monitor food and labor cost, and maintaining the highest professional food quality and sanitation procedures.
Supervising the Stewarding Manager and department Essential Duties and Responsibilities include:
Design and write all menus, and recipes for all culinary outlets.
Menus to be creative, unique, and innovative.
Change menus as directed by senior staff.
Ensure only positive guest reviews for the quality of food in all F & B areas Achieve budgeted food and labor costs.
Ensure proper culinary method and technique through continuous training and feedback.
Keep all food and service levels at a high standard.
Scheduling of employees Directly responsible for all purchasing.
Menu cost control.
Direct and lead sous chefs.
Maintain cleanliness of the kitchen and equipment.
Attend all weekly meetings.
Work collaboratively with front of house leadership on menu knowledge, efficiency and accuracy.
Required Licenses/Certifications:
Must have a culinary degree, and 4 years prior Executive Chef experience.
Hotel, Resort and/or Club whole property experience required.
Commitment to being a mentor for other chefs and culinary staff.
Good communication skills to convey information.
Working Conditions:
This position may require standing for long periods of time and working around equipment that puts off a good degree of heat.
Frequent lifting in-excess-of 50 pounds, use of sharp cutlery, kitchen equipment, hot liquids, etc.
in addition to high heat.
Skills and Abilities:
This position requires a highly motivated, organized individual that communicates, cooperates and is able to adapt to changing situations.
A commitment to long days and a personality that is well versed to deal with both front-of-house and heart-of-house business.
Must show control and leadership to ensure a positive and efficient crew.
Must be able to maintain stability under pressure.
Excellent communication skills both oral and written.
Must work closely with culinary staff, sous chefs, and front-of-house team members to ensure good relations.
Works closely with the Sales and Catering team and respective clients on menu design.
